Broccoli Melts – Smitten Kitchen

The perfect way to increase the nutrition of a classic cheese toastie, this simple recipe using gorgeous and seasonal broccolini makes for a delicious lunch or afternoon snack. Simply boil/steam the chopped broccolini, drain, cook the broccolini and garlic and whack it onto an oven tray and top with lemon juice and cheese, and grill until the cheese melts. This recipe makes 8 melts, but can easily be adjusted for larger or smaller quantities.

Moroccan Chicken & Vegetables with Honey & Raisins – Spice Fusion

This versatile and extremely flavoursome recipe calls for four cups of vegetables, meaning you can use whatever seasonal vegetables you wish! The recipe uses celery, potato, carrot, broccoli and pumpkin, but other seasonal favourites such as zucchini, sweet potato, capsicum or a handful of baby spinach would work perfectly in this spiced dish. Not only does this recipe use up whatever veg is left in the fridge, but it is extremely tasty, utilising Moroccan spices to warm us the meal, as well as your soul.

Roasted Pumpkin with Yogurt Sauce and Pine Nuts – RecipeTinEats

Ideal for serving alongside a Sunday roast or just as a healthy weekday lunch, this fully-loaded pumpkin salad features a gorgeous, tangy yogurt dressing. Add on some seasonal pomegranate for a pop of sweetness in every bite!

Autumn is a rich time of year for fresh vegetables, so make the most of sustainable produce by cooking with produce that is in season. Happy cooking!
